One of my favorite go-to salads in the spring and summer is easy to make and you can easily add it to many lunch or dinner combinations. Great with grilled chicken in the summer!
2 large cucumbers, peeled and diced
2 Roma tomatoes, seeded and diced
¼ cup red onion, diced
¼ cup balsamic vinegar
2 tablespoons olive oil
½ teaspoon basil
salt and pepper to taste
sun-dried tomato feta cheese (optional)
kalamata olives, sliced (optional)
2 – 3 Servings
Dice cucumber, tomatoes and onion and add to a medium-sized bowl. Add balsamic vinegar, olive oil and all of the spices. Mix with a spoon to cover the veggies in the vinaigrette and let it sit for at least 5 minutes, allowing the vinegar to absorb into the vegetables. Sprinkle feta cheese and kalamata olives to the top just before serving (optional).
If you are preparing the salad ahead of time for lunch the next day, store the vinegar and oil in a side container and add just before you plan on eating it. Enjoy!
